Dietary fibers are natural multifunctional product. They are used in many areas of the food industry. Due to its neutral taste and aroma, as well as to its nonreactive nature when combined with other components, dietary fibers are extremely easy to use; they increase the nutritional value and reduce energy content. They are necessary and healthy.

SANACEL is the basis of a balanced diet.

SANACEL ® fiber concentrates are natural ingredients for food industry. On the one hand, they have a high nutritional value, and on the other a large number of functional properties.As a result of mechanical grinding products from fibers of various length (23 -
1000 microns) are generated. The length of the fibers gives the opportunity to adjust their main technological property to combine with water or oil (400% -700% of its weight).
Halal and kosher certificates are available for all SANACEL ® products.

Sanacel cellulose is a water-insoluble powdered cellulose used

as an additive with number E460ii.

SOLUBLE FIBERS

Sanacel add – it is a mixture of soluble and insoluble fibers. Different plant fibers are mixed according to the specific requirements of customers and the peculiarities of production technology, in order to create an individual product that will meet the requirements of the application.

Technological properties:

- possible replacement of additives that improve texture and viscosity (clean label);

- emulsifying and stabilizing properties;

Sanacel apple – is a fiber obtained by particularly careful processing of pomace. Pomace contains a large amount of dietary fibers, including pectin. It also contains polyphenols, in particular procyanidins and quercetine which have high antioxidant potential.

 

NUTRITIOUS AND TECHNOLOGICAL PROPERTIES:

- soluble and insoluble fiber;
- contains 5% pectin (soluble fiber);

- contains about 0.2-0, 7% of polyphenols (especially quercetine glycosides)

- increases viscosity;
- high water binding.

APPLICATION:

- in bakery products, especially rye bread;

- cookies, crackers;

- cereals, muesli, extruded bars;

- fruit preparations.

Sanacel pea – fibers are obtained by particularly careful processing of pea seeds. Pea fiber is produced immediately after harvest.

Nutritious and Technological properties:

- contains about 60% of dietary fiber;

- without allergens
- increases viscosity;

Application:

- in bakery products, (increase in yield);
- meat industry (increase in yield);

- in products with reduced fat content (reduction of dry mouth);

- products in vacuum packaging (counteracting syneresis).

Sanacel potato –are potatoe fibers with high content of cellulose that are produced from potatoes with the help of special production process.

NUTRIMENTAL AND TECHNOLOGICAL PROPERTIES:

- contains about 65% of dietary fiber;
- high content of pectin and hemicellulose
- no allergens;
- rosetta stone color, easily blended;
- increases viscosity;
- very high water binding (possible increase upon water heating or sliding processes);
- high water-retaining properties;
- thermally stable;
- pH stable;

APPLICATION:

- in bakery products and pastries, (freshness prolongation);
- meat industry (increased yield);
- in products with low fat content (reduction of dry mouth feeling);
- products in vacuum packaging (resistance to syneresis);
- additional replacement of gluten, soy protein, wheat flour or potato flakes.
