Still today, giving a product attractiveness through decoration is one of the most effective methods to increase sales. Carmine / Cochineal

Carmine / Cochineal

Carmine is a natural colour obtained from the cochineal Dactylopius Coccus Costa, which grows in shrubs in the Central and South America.A solution of carminic acid is obtained from the cochineal by aqueous extraction. Subsequently, it is purified in order to obtain a stable water-soluble carminic acid. Cochineal extract or carmine are natural colours of anthraquinone red color

Depending on the extraction method, water or alcohol, different shades could be obtained from bright "strawberry" purple-red with low pH to dark purple "black currant" with high pH. Carmine has excellent temperature stability and light resistance. Application: it is applied as a food colour in products such as: fish and meat, confectionery, dairy products, bakery products, appetizers, snacks, drinks, cosmetics.

 

Annatto / Bixin and Norbixin

Annato bixin and Norbixin

Annatto is obtained from the seeds of annatto, which grows on the tree called Bixa Orellana. The Bixa Orellana tree is known as Annatto or "Achiote" in majority part of the South America and as "Urucum" in Brazil. Annato seeds contain the pigment bixin, which is a yellow-red, orange carotenoid. After extraction, bixin is used for coloring oil-based products, such as: cheese, processed cheese, appetizers, fats, oil, butter and margarine ...

Norbixin products could be obtained from bixin pigment by saponification, which are water-soluble colours annato. Norbixin is used in various food products.

 

Carotenoids / Paprika

Carotenoids / Paprika

Paprika (extract) is obtained by extracting lipids and pigments from the seedpods of Capsicum Annuum Linne, a sweet red pepper, it contains the pigment carotenoid - capsanthine intense red-orange color . The colour is usually an oil-soluble product, but after treatment water-dispersible or water-soluble form could be obtained.. it contains the pigment carotenoid - capsanthineintense red-orange color . Chlorophyll

Chlorophyll

Chlorophyll is a group of natural pigments produced by all photosynthetic plants, including algae and some bacteria. Chlorophyll is mainly obtained from alfalfa (Medicago sativa), nettle (Urtica dioica) or herbs. When it is used as a food colour, chlorophyll is recycled to replace the magnesium atom at its center with a copper atom, making it more stable and soluble in water.

Application: chlorophyll is mainly used in beverages, ice cream, sweets, sauces, pasta, pickles, cheeses, etc.

 

Curcumin / Turmeric

Curcumin / Turmeric

Curcumin is the main curcuminoid of the popular Indian spice turmeric. Curcuminoids are natural phenols that enhance turmeric a yellow color. It can be both fat-soluble and water-soluble. It gives to the product a bright color from yellow to orange.

Application: curcumin is used in cheeses, snacks, appetizers, processed meat products, beverages, etc.

 

Black charcoal

Vegetable charcoal is produced from fine particles of carbonized plant material obtained by steam activation of plant fibers, such as wood and cellulose.

Application: confectionery, bakery products, food decorations, curd glaze, black caviar substitute, cosmetics, pharmaceuticals, etc.

 

Anthocyanins / Purple corn

Purple corn has one of the deepest shades among plants. Due to its intense purple color, purple corn pigments have been historically used to color food and beverages.

Application: Anthocyanin-enriched colour is suitable for the use in beverages, fruit preparations, salad dressings, breakfast cereals, yoghurts, ice cream, pastries, etc.

 

Anthocyanins / Purple potatoes

Purple sweet potatoes are a source of natural food coloring, offering natural crimson-pink, red, purple colors depending on the pH of the product for which it is used. Suitable as a food coloring and has a neutral taste. Anthocyanins, which give it color, have excellent light and heat resistance.

Application: it is suitable for the use in beverages, fruit base, bakery, confectionery and other products.

 

Betanine / Beetroot

Betanine is the most important coloring component in red beetroot juice. The color of betanin depends on pH; between pH four and five it becomes bright bluish-red, with increasing pH it becomes blue-violet. When the pH reaches an alkaline level, betanin decomposes under the action of hydrolysis, as a result of which it becomes yellow-brown. The colour is available in liquid, paste or solid form, depending on the processing.

Application: betanin is more often used in: ice cream, soups, fruit or cream fillings, sugar coatings, gelatin desserts, lollipops and soft drinks, spray blends, cookie fillings, sweets and marshmallows, fruit preparations, meat products and meat substitutes.

 

Anthocyanins / Black (purple) carrots

Purple or black color of carrot depends on it pigments, called anthocyanins. Black carrot anthocyanins change the molecular structure when the pH of the solution changes. This change in structure leads to a shift of the shade from red and magenta to the blue one when the pH changes from acidic to alkaline condition. Anthocyanins from black carrots are stable in a wider pH range than anthocyanins from other fruit or vegetable sources.

Application: it is suitable for the use in yogurts, beverages, fruit bases and confectionery. Black carrot extract can become a natural alternative to synthetic food colours.

 

Cartamidine / Safflower

Safflower (distaff thistle) is one of the oldest agricultural crops of the mankind, its use in China was reported more than 2200 years ago. Safflower belongs to the sunflower or Compositae family, which presents herbaceous plants resembling pricky thistles with thorns on the leaves and in flower garden. Safflower is a widespread substitute of saffron due to its better price. Therefore, safflower is widely known as wild saffron. The colour has a deep yellow color.

Application: safflower is used to color beverages, rice, sauces, sausages, bread, confectionery, etc.

 

Phycobilins / Spirulina

Spirulina (Arthrospira platensis) is a blue-green algae that grows naturally in soft water. Spirulina has an extensive track record as a dietary supplement in many cultures. Spirulina contains Green Chlorophyll and phycobilins (pigment-protein complex), which during extraction create a number of blue shades. Spirulina extract is available in powder or liquid. colour of spirulina extract is an alternative to synthetic colours, such as diamond blue.

Application: spirulina extract is basically used in confectionery, yougurts, ice cream, frozen desserts, dessert fillings, dry beverages, gelatin, puddings and creams, etc.
